We are now officially in autumn…or winter? At this point, I don’t know if we should follow the weather or the calendar. What I do know is that there are a TON of amazing food deals this month. Plantain Tacos

Ingredients and Cost Analysis:

Plantains (I used green plantains)- 2 for $0.99

Bananas- $0.49 per pound

Cabbage- $0.50

Shrimp: $4.99 or $4.29 for canned salmon

Roma tomatoes: $1.29 per lb

Total: $8.26*

*This cost includes ingredients that go beyond what will be needed in this recipe (you won't use an entire cabbage for taco night...probably)

Optional ingredients:

Cilantro: $0.99

Avocado: $1.25

Lemon: $0.59

Lime: $0.50

Slice cabbage into julienned-sized pieces. Slice tomatoes into quarters. Prepare optional ingredients as desired.

Slice plantain skin lengthwise and remove plantain. Place in blender along with ½ banana. Add 2 tbsp water. You might need to add more water—the consistency should be like a runny batter. Add oil or butter to pan and place batter in pan (enough to make a decent sized ‘tortilla’). Once bubbles form on the top, and the bottom is fully cooked, flip over and cook until golden-brown. Repeat until all batter is used. Set on a plate under a lid so they don’t get cold. Cook shrimp in the pan adding seasonings as desired (I used Trader Joe’s Lemon Pepper—has onion, garlic, salt, pepper, and lemon). Once the shrimp are done, you’re done preparing! Now it’s a “make your own taco night!” Enjoy!

Yield: About 8 tacos
